Smoked mackerel torn up and tossed into a creamy cheese sauce mixed with chopped parsley, then poured over pasta. Quick and delicious.
Smoked mackerel and potato bake is a great combination and inexpensive to make. For four, cook two large potatoes and cut into chunks. Thinly slice a medium onion. Put the potatoes in an oven proof dish, tuck torn up pieces of two smoked mackerel in between the potatoes and scatter over the onion. Add a little salt and a lot of black pepper and dot the top with butter.
Pour 200ml of single cream over the mackerel and potatoes. Pre-heat the oven to 200C and cook for 20-25 minutes.
